Wild Rice Stuffing

Wild Rice Stuffing

For 4 people 

  • 1  Cooking Spray
  • 1  small chopped onion
  • 2  Tb raisins
  • 2  stalks chopped celery
  • 2  Tb I can't believe it's not butter
  • 1/2  cup chopped mushrooms
  • 1/2  tsp salt
  • 1/2  tsp pepper
  • 1/2  tsp garlic powder
  • 2  Tb chopped parsley
  • uncooked wild rice
  • 2  cups low sodium chicken stock
  • cup water as needed
  • chopped walnuts
 
  1. Coat a medium saucepan with cooking spray and heat.
  2. Sauté onions till translucent.
  3. Add Celery and raisins and cook for about 5 minutes.
  4. Add I can't believe it's not butter, mushrooms, salt, pepper and garlic powder. Sauté for 3 minutes.
  5. Add rice and heat for 3-5 minutes.
  6. Add Chicken stock and walnuts cover turn heat to low and cook slowly.
  7. Check to see if you need to add some water when liquid is almost dissolved by testing (wild rice is cooked till it is soft with a little chew to it (like al dente pasta)).

Wild rice because of the different texture and the earthly colors makes a great holiday stuffing. I like to make the stuffing and loosely stuff it into the turkey or chicken just before I put it into the oven.
