Springtime Popovers

Springtime Popovers


•   6 popovers or 12 muffinovers (6 servings)


•   2 eggs

•   1/2 cup flour

•   1/2 cup milk

•   1/4 tsp salt

•   1 0.5 Tbs margarine melted



1         Preheat oven 375.

2            Beat together eggs and milk; add flour and salt until well combined.

3            Heat popover or muffin pan.

4           drizzle some melted margarine in each muffin pan while hot.

5            Fill each muffin tin 2/3 full, do it quickly so pan does not cool down.

6           Bake 30 minutes without opening open so they pop up. Prick each popover to let steam escape so they stay puffed up. If using regular muffin pan only cook about 20 minutes. You know when they are done when they puff up and are golden brown.

Popovers delicious served hot, with fresh all fruit preserves.
