Red And Green Veggie Platter
For 8 people
1 cup fat free ranch dressing
10 oz box of chopped frozen spinach, drained
2 chopped green onions
2 large tomatoes
2 parsley sprigs
1 bag baby carrots
6 stalks of celery
1 red pepper
1 green pepper
1 box medium mushrooms
Red And Green Veggie Platter Directions
Mix together ranch dressing, spinach, and green onions.
Hollow out tomatoes and fill with dip. (Keep extra on the side for refills.) Garnish top with parsley sprigs.
Surround on a platter with veggies and serve.
If you like the dip a little greener, add a few drops of green food coloring. The stuffed tomatoes are a little like Christmas tree ornaments.
