Roasted Chicken with Cherry Glaze
4 - 5 chicken thighs, with bones, skin removed
1/2 lb. frozen or fresh pitted cherries (frozen peaches, apricots or strawberries, work great too)
1/4 C lite orange juice
3 TBS lite soy sauce
1/4 C Splenda, baking brown sugar
1 TBS lemon juice
1 TBS minced garlic
1/4 tsp dried ginger
Preheat oven to 350 degrees.
Place chicken pieces in a casserole dish.
Blend together; cherries, orange juice, lite soy sauce, Splenda blend brown sugar, lemon juice, minced garlic, and ginger.
Pour cherry mixture over chicken and place in oven.
Bake for about 20 minutes, until chicken is just cooked. If sauce becomes a little too thick during cooking, add a little water.
